Egg packing centres are holdings which sort, label, package and/or repack eggs by grade and weight. Egg packing centres may only be operated if they are authorised by the competent authority on request and a packing point identification number has been assigned. If eggs are delivered from the farm (production site), at the front door or on a public market directly to the final consumer and not sorted by quality and weight classes, no approval as a packing centre is required. Eggs may only be sorted by size and quality grade in packing centres. Anyone who markets the eggs through a trading partner (retail, baker, kiosk, restaurant, canteen or other reseller) or offers the eggs sorted by size and quality class or who has a sales radius of more than 100 kilometres requires a registration as a packing station.

Only undertakings which have the appropriate premises and technical equipment for sorting eggs by grade of quality and weight may be admitted as packing centres. Packing centres must have the following technical equipment necessary for the proper treatment of eggs: an automatic or permanently manned illumination system / illumination lamp, which enables the quality control of the individual eggs Device(s) for determining air chamber height a system for sorting eggs by weight class one or more calibrated scales for weighing the eggs (note: 1 gram accurate) Device(s) for marking eggs The premises of the packing centre and the technical facilities must be in good condition and clean and free of foreign odours. Packing centres working exclusively for the food and non-food industry do not have to have suitable technical equipment for sorting eggs by weight class.

Eggs must be sorted, labelled and, if necessary, packed within ten days of laying. Sort and, if necessary, packaged eggs of category A may be delivered only with a printed producer code. Packaging must be clean, sto ß firm, dry and unhealthy. The material of the packaging must protect the eggs from foreign odour and possible deterioration of quality. With the approval of the packing centre, all marketing channels are open. The following lists must be applied: Purchase list (number of eggs purchased per producer) Sort list (number of eggs per category per day) Sales list (number of eggs sold with place of sale and date) The retention obligation of the lists is 12 months.
Approval as a packing centre must be requested from the competent authority. The competent body shall carry out an on-the-spot check and examine your application. You will receive a written notification of the result. If your application is granted, the authority will provide you with the identification number you need to identify the packaging of eggs (packing point number). Permission to operate the packing centre may be revoked at any time if the required conditions are no longer met.
